Episode 77: Tiffany Henschel

In this episode of Intermittent Fasting Stories, Gin talks to Tiffany Henschel. Tiffany is a high school English teacher from Dallas, TX.

Tiffany never struggled with her weight growing up. She gained and lost weight with each of her pregnancies, but coupled with emotional stress and the “low-fat craze” of the 90s, she put back on a lot weight. “I eventually just didn’t care.” However, this was the beginning of a journey that would change her life.

Tiffany reached her highest weight in September of 2015. Desperate, she tried a shake plan which helped her to lose 80 pounds within a year. However, she gained it all back once she began eating regular meals again. In the Fall of 2017, she bought The Obesity Code, but didn’t read it. In the Fall of 2018, after finally reading it, she began to experiment with fasting, but not full-time. She wasn’t clean fasting, which made the fast extremely difficult. Finally in January of 2019, she committed to IF full-time, with 16:8, and one 24-hour fast once a week. She finally read Delay Don’t Deny, where she learned about the clean fast. She also tried ADF, (Alternate Day Fasting), which worked well for her. The clean fast made all the difference, and weight came off easily.

Tiffany shares that once she hit her maintenance weight, she felt more comfortable in her body and was finally able to show her personal style. She asked herself: “Who do I want to be? What do I want to present to the world?” She had a new sense of authenticity. Even though she had been obese for 25 years, she always felt like a thin person on the inside.

She has experienced some wonderful health benefits from IF. Tiffany no longer has debilitating seasonal allergies, which would give her flu-like symptoms. The lymphomas under her skin are gone, and her skin is now bright, clear and smooth.

The advice Tiffany would give new IFers: “I wish I knew about the clean fast. Listen to the body you currently have right now. Sometimes you’ll need ADF, sometimes a daily eating window. But your body’s needs may change in two weeks or a month.”
